me + cookbooks
Jul. 30th, 2005 04:29 pmi attempted to make coconut sticky rice this afternoon, but my kitchen skills are mutant and irreproducible, and thai-temple style sticky rice has evaded me again. i ended up with these things that are...hm. coconut & spice rice pudding muffins? they're delicious, anyhow. i also have fresh mango and strawberry sauces, to go on top.
rough recipe:
1 c. mochigome + 1 can coconut milk + ~0.75 c. water. heat to boil, turn down to low, let simmer until liquid is absorbed. (i started with half the can of coconut milk, then added it in later because i didn't feel like making anything else with coconut milk.) add a bit of honey & brown sugar, to taste. (at this point, the mochigome was looking a little too sticky, so i went and looked up two or three recipes for rice/bread pudding. me + cookbooks = mutant food.) beat 2 eggs, temper with the coconut/rice mush, add eggs in. add some bisquick-mix, and a little butter. and spices. (cinnamon, clove, ginger; cardamom would be tasty, too.) a pinch or two of salt. stir. ponder. heat oven to 350F. fill muffin-pan cups with the mixture, cook for 15 minutes or so. set under the broiler for a few minutes to brown the tops a bit.
take rice-pudding-muffins out, set to cool on a wire rack. (otherwise they'll get soggy bottoms. no good.) finely chop & beat some strawberries, mangos, etc (or use a food processor if you're all fancy like that) to make the fresh-fruit sauces.
